POTJIE POT RECIPES FOR SUMMER

Summer is finally here, and to celebrate we’re giving you some great recipes for your South African Potjie Pot. If you’re unfamiliar with what a Potjie pot is, you can look at our Potjie Pots for sale here. Typically cooked over hot coals, Potjie Pots can make delicious food with low maintenance. Usually, most of your effort will go into the preparation of ingredients, then after that, it’s just a matter of time. Letting all your food mix together in delicious combinations of flavour.

Lamb Potjie

This is a nice simple recipe to get started with, and delicious too! Preferably you’ll want to cook it in a cast iron Potjie Pot, however an enamel Potjie Pot will still deliver you great food.

What you’ll need:    

  • 2 mutton stock cubes     
  • 2kgs lamb cut into large chunks     
  • A bottle of red wine    
  • 5 garlic cloves (whole or roughly chopped depending on preference)    
  • 2 onions chopped    
  • Vegetable chunks – This can be where you make your Potjie personal by adding what you like. Potatoes and carrots are a good place to start.    
  • 5 sprigs of rosemary and thyme     
  • 5 bay leaves   
  • Olive oil    
  • Plain flour    
  • Salt and pepper for seasoning

Cooking Instructions

  1. Start off by dissolving your stock cubes in two litres of water and set aside for later.
  2. Heat up your Potjie pot on some hot coals. While it heats up mix your lamb up with the flour, salt, and pepper. Add the olive oil to your pot and then add the meat.  
  3. Cook until browned, then add the stock, garlic, onions, and red wine.   
  4. Now you must leave it. Don’t touch it for at least half an hour. No stirring, mixing or anything. Patience is key to getting the best Potjie Pot flavours.  
  5. Once 30 minutes have passed, prod your lamb to check if it’s soft. If it is, that means it’s time to add the rest of your ingredients. Add your vegetables and leave for another 30 minutes. 
  6. Check to see if your vegetables are soft. If they are, take up a big serving of your meal, and enjoy! 



Beef and Beer Potjie

With this potjie pot recipe, we add a tasty twist with the addition of your favourite beer! For full flavour, we recommend adding one of our traditional South African beers, such as Castle Lager.

What you’ll need:    

  • 15ml cake flour    
  • 5ml mixed herbs    
  • 5ml paprika    
  • 375ml beer    
  • 1kg beef fillet, cubed   
  • 250ml beef stock   
  • 5ml butter    
  • 1 packet of tomato soup powder
  • 15ml oil  
  • 1 bay leaf 
  • 2 medium onions, sliced into small pieces    
  • 15ml white sugar    
  • 8 green beans, cut up    
  • Salt and pepper to taste    
  • 4 carrots, peeled and thinly sliced   
  • 1 garlic clove, chopped    

Cooking Instructions

  1. Heat up your Potjie Pot and get it ready for cooking.
  2. Coat the meat in the flour and paprika.
  3. Add the oil and butter to the pan, followed by the meat and let it brown.
  4. Remove the meat then brown the onions and sugar until the onions are soft.
  5. Then, add the beans, carrots and garlic. Then cover it with a lid and let it simmer for 5 minutes.
  6. Add the meat back into the pot, and add the herbs, beef, beef stock, beer, soup powder and bay leaves.
  7. Then put the lid back on and leave to simmer for another hour until the meat is soft.
  8. Once the meat is soft and your meal is ready, season to your liking with salt and pepper and enjoy!
