South African Delights: 3 Courses, 3 Quick and Easy Traditional Recipes

In South Africa, eating meat is significant to traditional culture. A variety of meats are commonly eaten, including beef, mutton, goat, and chicken. South African recipes are known for their spice and intense flavour, but also their cooking techniques- Barbeques, grills and stews are amongst popular methods.

Mix up your mealtime this week by tucking in to a delicious and traditional South African meal- we are sure that it’ll go down a treat. Not only have we picked some stunning recipes, but these are all quick and simple so that we can minimize mess and complication! These are not only ideal for dinnertime, but also for impressing your guests at a gathering. 

The three courses in this blog are;

Starter: Suya Chicken

Main: Durban Chicken Curry

Dessert: South African Milk Tart 

Starter: Suya Chicken

As we have learnt, South African cuisine largely consists of meat- hence appropriate to have a chicken starter! Suya are baked chicken kebabs/satays that are flavoured with a spicy, peanut butter sauce. They are also healthy, which is an added bonus! This recipe should make 10 skewers, so there is plenty to go round! 


Suya Chicken Recipe

Ingredients List

  • 1 kg of skinless and boneless chicken thigh
  • 4 tablespoons of peanut butter
  • ½ tablespoon of cayenne
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1 tablespoon of white pepper
  • 1 tablespoon of bouillon
  • 1 tablespoon of salt
  • 2 tablespoons of vegetable oil
  • A pack of skewers (to put the chicken onto) 

Method

  1. Preheat the oven to 230°C and line a tray with baking paper (to prevent the chicken from sticking).Dice the chicken into cubes (suitable for a skewer).
  2. Create the Suya paste by mixing the garlic powder, onion powder, smoked paprika, white pepper, cayenne pepper, peanut butter and bouillon.
  3. Flavour the chicken with the Suya paste by mixing them together.
  4. Once the chicken is flavoured, place chunks onto skewers (equal amounts).
  5. Place the skewers onto the tray and drizzle with oil. Bake for about 20 minutes, turning the chicken regularly until the chicken is white inside and has a core temperature of at least 70°C.


Main: Durban Chicken Curry

Authentic Durban Chicken Curry is incredibly flavorsome. As explained by the name, this recipe comes from Durban, which is a city located on the east coast of Africa. This recipe should serve 4-6 people. 


Durban Curry Recipe


Ingredients List

  • 1kg chicken breast (diced)
  • 1 tbsp coriander (ground)
  • 4 cloves of garlic (ground)
  • 1 inch of ginger (ground)
  • 1 brown onion (diced)
  • 2 large potatoes (diced)
  • 2 large tomatoes (diced)
  • 250ml chicken stock
  • 1 tbsp of cinnamon powder
  • 1 tbsp curry powder
  • 2 tbsp of ghee
  • Basmati rice (optional) 

Method

  1. In a large pan or wok, melt the ghee. On a low heat, add the spices to the pan and stir in with the butter. Leave this for about a minute- ensuring that it doesn’t burn!
  2. Add the onions, garlic and ginger to the pan and fry until softened (about 3 minutes) on a medium heat.
  3. Add the chicken a rise the heat level. Allow the meat to brown and coat the chunks with the onions and spices. 
  4. After about 5 minutes of cooking the chicken, add the chopped tomatoes to the pan and stir. Add more seasoning if you think it is necessary.
  5. Add the diced potatoes and chicken stock to the pan and leave to simmer on low to medium heat for 30 minutes.
  6. Once the chicken is cooked through and the potatoes are soft, dish up the curry onto a bed of basmati rice and garnish with coriander. 


Dessert: South African Milk Tart

This divine dessert is so simple to make and tastes just like a giant egg custard! The South African Milk tart can be eaten cold or warm. The following recipe will make 8 portions, so why not share this special treat with some friends? 


Milk Tart

Ingredients List

  • 3 egg Yolks
  • 3 egg Whites
  • 1 litre of milk
  • 200g caster sugar
  • 45g unsalted butter (melted)
  • 150g self-raising flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon 

Method

  1. Preheat the oven to 190°C (Gas mark 5).
  2. In a large bowl, mix the sugar and butter until smooth. Next, add the egg yolks and beat together. Sift in the flour, salt and baking powder until the mixture is well combined. Finally, mix in the milk and vanilla.
  3. In a separate bowl, whip the egg whites. Once you have done this, add them to the existing cake mix and stir together.
  4. Pour the mix into a greased tart case/tin and sprinkle some cinnamon on top.
  5. Bake for 25 minutes at 190°C (Gas mark 5), then a following 25 minutes at 170°C (Gas mark 3). To check if the tart is cooked, jiggle the case and ensure that the centre is set.
